Welcome to the Savory Green Cooking School! 


Savory Green Cooking Classes are designed to introduce the amateur chef to the world of sustainable, green Mediterranean style cooking. Students prepare recipes in a hands-on environment with assistance from our professionally trained chef instructors. Impress your friends and family with a gourmet meal, perfect pie crust, or well-seasoned sauce. It is our goal to offer you a wonderful variety of classes in order to appeal to the adventurer who lives in all of our palates. There is something for everyone, and please also consider planning your own personalized culinary class with friends!

Class sizes will be a maximum of 8 students to ensure each class member get personal attention. We look forward to having you join Chef Tracy as she leads you through a delicious, sustainable and fun culinary journey!

Build Up Your Basic Skills Series

The final two basics classes will be held on Friday, 3/23/2012, 3/30/2012 from 6PM to 9PM.
Each class can be purchased individually for  $75.00/person.


Class 3 More Sauces
We will explore more sauces created from the 5 Mother sauces. Some sauces included will be a bechamel sauce to create the Greek stuffed eggplant dish, papoutsakia (little slippers). From the Bechamel, we will create the small sauce mornay to be served over the classic French grilled cheese, Croque-Madame; a minted spring pea and watercress veloute; and egg-based emulsions to create a few salads. Yes, there will be a chocolate sauce included, as well!

Class 4 Soups and Stocks
This is an imperative skill to create healthy, hearty and nourishing hot foods. In this class, we will learn the techniques of creating healthy soups and stocks. Tonight, we will prepare and enjoy a  beef stock dish, a vegetable stock dish as well as chicken soup, and tomato soup. The value of the soups and stocks class is that YOU KNOW what goes into making a nourishing dish for yourself and your family! Most of us include a bowl of chicken soup to nurse a cold because it works!

There is much excitement in Rome! Cafes, historical fountains and amazing food!

In this class, we will harness a few signature Roman specialties. We will begin with creating roasted red peppers en marinade with olives and herbs. We will move forward to the creation of fresh pasta, tonight featuring homemade ravioli, and our main entre, one of my Uncle Al’s favorites, veal scaloppini. We will end our Roman dining experience with a Crostata di Ricotta. (Italian-style cheese cake made with fresh ricotta cheese, candied fruits and nuts. A great finish topped with an espresso!

In this class, we will create some delicious and desirable Greek desserts! We will create the ever-popular Greek-style baklava with seasoned honey syrup, classic Greek cookies including, butter cookies, (kourabiedes), topped extensively with castor sugar, honey cookies, (melomakarano) and, sweet, Greek Custard pie (kalactobouriko)! We will enjoy these sweet treats with a cup of Greek coffee! This calls for another shout of OPA!

Meze is the Greek word for small plates of delicious Greek cuisine.  These delicious small bites are served on small plates, similar to what is most familiar to eaters as tapas.

In this class, we will create delicious Greek classic appetizers along with specific techniques to create them. We will prepare delicious phyllo wrapped triangles of spinach, feta cheese and spices (spanakopita), Greek cheese triangles (tiropitakia) and mini meatballs (keftedes). Stuffed grape filled with rice, herbs and spices along with spiced grass-fed beef and rice leaves will be on the menu. We will toast our delicious meze with Ouzo --Opa!

 Absolutely, a deliciously fun class!

In this class, we will celebrate spring by creating 3 delicious, refreshing, and satisfying cupcakes. We will create a Lemon-curd cupcake topped with a lemon-cream topping, a lemon-raspberry cupcake topped with a delicate pink meringue, and a Devil's Food chocolate cupcake. Yes, this is both satisfying and refreshing!

Most people enjoy the thrill of the indulgent choices and tastes of a Sunday brunch!
In this class, we will create a few classic scones, savory herbed smoked cheddar and cranberry-orange. We will create a seasonal spinach quiche and a side of smokey bacon. Fresh fruit options will be created. Our delicious fare will be enjoyed with freshly brewed coffee and tea as well as freshly squeezed orange juice. Certainly a treat for all!

Teen Baking Basics Series!  (Ages 12-16)

Come learn some essential basic skills to create French pastry. This 4 class series examines key aspects in French pastry basics! 9:30am-1:30pm for each session. Cost for series: $320.00

Class 1.    French Pastry 101 Monday, July 9, 2012 9:30AM- 1:00PM  In this first class, we will create the classic French Pate Au Choux. We will create some delicious cream puffs in different flavors of pate au choux, along with a classic beignet!

 Class 2:  Pies and Tarts Wednesday, July 11, 2012 9:30AM-1:00PM

In this class, you will learn how to make a proper French pie crust, Pate brisee, and a sweet pie crust, Pate Sucre. We will fill our crusts with fresh seasonal fruit and create a savory quiche.
